Dorayaki is a very popular Japanese confection, they are basically two small pancake-like patties filled with Anko (red bean paste). This is a snack that kids will love. You can easily prepare a couple for your little one to bring to school or serve as afternoon tea when they come home from school. Doraemon, a very popular anime character is addicted to dorayaki!
For (Anko) red bean paste
1 cup red beans
1 1/2 cup sugar
Water
For Dorayaki
1 1/4 cup all purpose flour
1 tsp baking soda
2 eggs
1/2 cup sugar
1 Tbsp honey
3/4 cup milk
What To Do:
For (Anko) red bean paste
- Soak red bean over night in cold water
- Put red beans in a pot with 2-3 cups water and let it boil for 5 minutes. Discard water. In a clean pot, place red beans and 2-3 cups of water, cover and let it simmer for 1.5 to 2 hours.
- Discard water again, put soft beans back in the pot with sugar at a medium high heat.
- Stir for about 10 minutes until a paste is formed. Set aside.
For Dorayaki
- Prepare and mix flour and baking soda in a bowl.
- In another bowl, whisk eggs, sugar, and honey together. Add milk and mix well. Stir dry ingredients into egg mixture, and whisk until batter becomes smooth.
- Heat non-stick frying pan with a small amount of oil and wipe excess oil well. At medium low heat, drop 1/8 of a cup of batter onto the pan, like a pancake. Cook about 2 minutes until the surface of the pancake has a lot of bubbles and the edges become dry. Flip over and cook 1 more minute.
- Take one cake and scoop of Anko and cover with another cake. Press with hands.
